To participate in this study, you must be able to follow diet instructions carefully and eat everything on the menus.
If you participate in the APPROACH Study, you will first eat a baseline diet for 2 weeks and then 3 different test diets for 4 weeks each. The main part of the study is 18 weeks long.
Everyone will start with the baseline diet for 2 weeks with the following nutrient composition: 13% protein, 50% carbohydrate, 37% fat, which resembles the typical American diet. Next, you will be assigned to either a high or low saturated fat diet group. The saturated fat is mostly from dairy products. Within each group, you will consume, in random order, three test diets with protein coming from three different sources each for 4 weeks. The protein sources to be studied include red meat (i.e. beef, pork), white meat (i.e. chicken, turkey) and non-meat sources (i.e. nuts, beans, and soy). Between each test diet period, you can eat your own diet for 2 to 6 weeks.
